- 70g room temperature water

- 804g good bread flour
- 75g whole wheat flour
- 740g water @90F/32C
- 18g fine sea salt

- 300 ml agua
- 300 gr harina de fuerza
- 400 gr harina de trigo
- 12 gr sal
